This 100 Calorie Chocolate Cake Cupcake Recipe is my secret weapon when it comes to indulgences. I love chocolate but I don’t love the calories that come with a typical chocolate cake recipe. This chocolate cake adaptation will not only satisfy a chocolate craving, it will delightit.

To say I have a sweet tooth would be an understatement.I enjoy chocolate so much that I’ve been known to skip nutritious calories to save room in my diet for chocolate. This is especially true around a certain time of the month. I have an absolute passion for chocolate cake – mainly the result of marrying a chocolate cake lover and enthusiast – my husband.

I’ve topped my cupcakes with 1/2 a strawberry, which is under 3 calories. You can also top these with a kiss of milk chocolate – but that would be an additional 22 calories per piece.

This “chocolate cake” cupcake recipe uses substitutions to my chocolate cake recipe to cut calories. This recipe is also gluten-free. Here I’ll explain how you can re-create this recipe at home – so that you can enjoy chocolatey flavor cupcakes without all the calories. I’ve included a link to my perfect chocolate cake recipe at the bottom of this post – in case you’d like the full-on chocolatey goodness that comes with ingredients like whole milk, butter, and sugar – but this post focuses on the low calorie version.

A Chocolate Cupcake Pick-me-up

This Chocolate Cupcake recipe is my personal favorite when I need a special treat to get me through that time of the month. I think every woman needs to feel confident all month long. And it’s a real treat to be able to eat chocolate cake and not have to worry about putting on extra pounds in the process. I pack my backpack with these chocolate cupcake treats and Kotex for days when I’m running errands and need a snack to pick me up.

Ingredients for 100 Calorie Chocolate Cupcake Recipe

The chocolate cake mix has been adjusted to cut calories without sacrificing chocolate flavor. I use real coca powder in this recipe.I prepare my ingredients ahead of time in pinch bowlsto help keep everything organized when baking.

  • 1 Cup SoyFlour (for more body – especially if baking at high altitude – remove 2 tablespoons of soy flour and replace with 2 tablespoons of all purpose flour)
  • 1/2 Cup Truvia (a Stevia-based)baking blend sweetener
  • 3/8 Cup Cocoa Powder
  • 1 Teaspoon Baking Powder (remove 1/4 teaspoons for high altitude)
  • 3/4Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/2 Cup 2% Low FatMilk
  • 1/3 Cup Applesauce
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • 1/2 Cup Boiling Water
  • 1 Cup fresh washed strawberries (optional)
  • Handful of chocolates (optional)

The total caloric count for all the required ingredients is 1205 calories. Since this recipe yields 12 cupcakes, that’s approximately 100 calories per cupcake.

How to Bake the Perfect100 Calorie Chocolate Cupcake Recipe

Step 1 – Preheat your oven to 350 degrees and line a cupcake pan with paper liners.

Step 2 – Measure your ingredients.I like to measure and double check all my ingredients before baking. This simple step has saved me from many a baking catastrophe. While you are measuring your ingredients, set your 1/2 cup of water on the stove to boil. Pay attention – it doesn’t take long to heat and you don’t want your water to evaporate.

Step 3 – Mix the Dry and Wet Ingredients Separately.I recommend mixing all of the dry ingredients in one bowl and all of the wet ingredients in another bowl before combining them. I think this makes for a better distribution of ingredients. When you combine the two, you’ll add everything except the boiling water.

Step 4- Mix the Dry and Wet Ingredients Together.At first your mix will seem thick. Don’t worry, the boiling water is next.You can use a blender or mix this by hand – either way works just fine.

You add the boiling water last. After you add the boiling water your mix will look thinner.

Step 5 – Beat Air into the Batter.It’s also very important to beat air into the mixture. This greatly effects the texture of the cupcakes.

Step 6 – Pour the batter into your cupcake pan. You’ll want to distribute your cake batter evenly into your cupcake pan –from a depth perspective. Make sure the batter does not exceed 2/3rds of the cupcake pan in depth – else you may have overflow. As you can see from this photo, I’m not the only one excited to eat these chocolate cupcakes!

Step 7 – Bake the cupcakes. I set the timer for 20 minutes. The total cook time for this batch was 22 minutes. Depending upon your oven – these will take anywhere from 20 to 25 minutes to bake.Your cupcakes are ready to come out of the oven when a toothpick that’s been inserted into the center of your cupcake comes out clean.

Step 8 – Let the cupcakes sit to cool.I recommend letting the cupcakes sit for 10-15 minutes to cool before you eat them. Once cooled you can top them with a strawberry half.
