There are few things greater than golden brown sausage rolls encased in flaky puff pastry, especially when accompanied by tomato sauce or a tomato relish. We love sausage rolls. Whenever sausage rolls are present at a picnic or gathering, our willpower is put to the test.

What makes these sausage rolls recipe the ‘best-ever’?

It all starts with the choice of meat filling. The combination of veal, pork and sausage meat is what makes these sausage rolls extra juicy, flavour-packed and moist.

The addition of tomato sauce, Worcestershire sauce (for extra flavour) and herbs creates the perfect balance of sweet, salty and umami. The carrot, garlic, and onion act as a flavour-base that adds a depth of flavour to the filling to our sausage rolls. Plus, these sausage rolls are a cinch to make, just mix all ingredients in a bowl and you’re ready to roll! Of course, a swathing of egg wash over the puff pastry makes for a crisp, flaky finish and a very good sausage roll. Once you've added the egg wash (just lightly brush it over the unbaked sausage roll tops), you can always sprinkle on some poppy seeds or sesame seeds to finish.

  • 4 sheets ready rolled puff pastry

  • 1 tbsp milk

  • 1 egg

  • 500g veal mince, or beef mince

  • 500g sausage mince

  • 1 small brown onion, finely chopped

  • 1 small red onion, finely chopped

  • 1 medium carrot, coarsely grated

  • 3 cloves garlic, crushed

  • 1/4 cup finely chopped fresh flat-leaf parsley

  • 1 1/2 tbsp tomato sauce

  • 1/4 cup (60ml) worcestershire sauce

  • Select all ingredients

  • Preheat oven to 220C/200C fan-forced. Line 2 large baking trays with baking paper.

  • Thaw puff pastry (4 sheets ready rolled puff pastry). Meanwhile, combine milk (1 tbsp milk) and egg (1 egg) in a small jug. Whisk well. Combine veal mince (500g veal mince, or beef mince), sausage mince (500g sausage mince), onion (1 small brown onion, finely chopped|1 small red onion, finely chopped), carrot (1 medium carrot, coarsely grated), garlic (3 cloves garlic, crushed), parsley (1/4 cup finely chopped fresh flat-leaf parsley) and sauces (1 1/2 tbsp tomato sauce|1/4 cup (60ml) worcestershire sauce) in a large bowl. Season with salt and pepper. Divide mixture into 8.

  • Lay a sheet of pastry on a flat surface. Cut sheet in half horizontally. Spoon 1/8 of the mince mixture down along the long side of one pastry half, shaping mince into a long sausage shape. Brush opposite long edge with a little egg mixture

  • Roll up pastry to enclose filling, finishing seam side down. Brush top of log with egg mixture. Cut into 6 short pieces. Place pieces, seam side down on prepared tray, 2cm apart. Repeat with remaining mince mixture, pastry and eggwash.

  • Bake for 25-30 minutes or until golden and cooked through.

A note from our recipe tester: “I always preheat my oven for at least 15-20 minutes before baking these sausage rolls (or any recipe with puff pastry in fact). Puff pastry relies heavily on even heat to rise and puff, so a well pre-heated oven is essential. I also space out the sausage rolls 2cm apart on the baking tray, as this lets the heat circulate between the pastries to allow for even browning. What is sausage meat?

Sausage meat (the meat used in sausage rolls) is usually made from well-seasoned and spiced minced pork, beef, or veal. It has more flavour than regular mince thanks to the high-fat content and seasonings added, giving sausage rolls that more-ish flavour. You can buy sausage mince from most butchers, if it's unavailable, use thick beef sausages and remove the skins. Pork and veal mince also make great substitutes for sausage mince in this sausage rolls recipe. The result? Incredibly good sausage rolls.

Why do my homemade sausage rolls have soggy bottoms?

To prevent soggy sausage rolls, make sure your oven is preheated before cooking. Ensure to space out the sausage rolls on the baking tray when cooking to ensure there is enough room for the air to circulate and allow them to crisp up. Once cooked, transfer from the baking tray to a wire tray to cool. A key tip is to use cold baking trays as they will stop the puff pastry at the bottom of the unbaked sausage rolls from softening before they're cooked.

Do you put egg in a sausage rolls mix?
