"This is a true Tex-Mex recipe concocted by a distant relative stationed at the Alamo nearly 160 years ago. According to family lore, he was out looking for some good tomatoes when Santa Ana attacked the now famous Texas landmark. Luckily, our relative kept this recipe in the lining of his coon-skin cap, and both he and his avocado dip lived to fight another day. Years later, near death from an infected Chihuahua bite, he looked deep into his son's eyes, and with his last breath, uttered the familiar phrase "Remember... the...guacamole.""

  • 6 avocados (soft, but not mushy)
  • 2 -4 garlic cloves, minced (depends on how much you like garlic)
  • 1 lime, cut in half
  • 1 medium tomatoes, diced
  • 12 medium onion, diced
  • salt
  • chopped cilantro (optional)
  • 1 diced jalapeno peppers (optional) or 1 diced serrano pepper (optional)

  • Cut avocados in half, remove pit, and spoon avocado into a mixing bowl.
  • Add minced garlic and squeeze the juice from one-half of the lime into the bowl of avocado.
  • Mash the ingredients together to desired consistency using the back of a large spoon or a potato masher (some like the avocado chunky, some like it smoother).
  • Fold in diced tomato and diced onion, a couple pinches of salt, and the juice from the remaining lime half (Also add cilantro or peppers at this time).
  • Cover the bowl and refrigerate for 30-45 minutes.
  • Uncover and taste.
  • Add salt as needed.
  • If you don't give the resulting guacamole at least 4 stars, then you ain't making it right.
  • NOTE: The purpose of the lime is to allow any leftover guacamole to retain its "avocado" color as it sits in the fridge.
  • Some folks use lemon, but it's been my experience that if you accidentally add too much lemon, it seriously affects the guacamole's flavor; if you happen to add too much lime, the guacamole just gets a little more tangy.
  • If you find the leftover guacamole has darkened, simply stir it before eating and use more fresh lime juice next time.
  • Wholly guacamole may be used as a topper with tacos, enchiladas, fajitas, etc.
  • However, some say it is at its best with a bowl of warm tortilla chips and an ice cold beer.

  1. I have made this version for years. It is fantastic. I always use white onion and a touch of Mexican oregano. Guacamole should be chunky.

  4. We were going to a poolside BBQ and I had picked up some store bought guacamole to go with our fajitas. My husband stared at it in horror and anounced "You can't take that!" "These are native Floridians honey, they don't even know what guacamole is," I replied. Well the guacamole purist had his way and we made homemade guacamole, using this recipe. It was great guacamole and everyone loved it! I would recommend this recipe to anyone who likes avocados, it is perfect for the afficiando and beginner taste buds.

  1. Very very very good!!! OK, I kind of cheated and didn't let it sit 30-45 minutes, but I think it sat long enough, because it was AWESOME! My sister gave me 4 humongus avocados from a friend's tree in West Palm Beach. Each of these, I kid you not, was almost as big as my head. They were gorgeous and needed an excellent recipe to do them justice. I used only 2 for my recipe since I am assuming that the recipe was referring to Haas avocados which are quite a bit smaller- I also used green onions instead of the white and added a bit of oregano. This guacamole was as good as any that I have had in authentic Mexican restaurants. I have never made guacamole this good! Shows you what great ingredients and an amazing recipe can do!   2. Learned to make guacamole when I live in southern Arizona. I use a few splashes of hot sauce instead of the jalapenos......gives it a great taste and the kids don't complain about peppers being in it. This is a every week food item in my house.

  3. I have been making my guacamole like this for years!!! The only thing different I do is use garlic powder instead of garlic cloves. This truly is the best guacamole recipe out there. I really feel cilantro is one of the key ingredients.

  4. Enjoyed this very much. Didn't have any tomatoes (it's wintertime), so I added 3 Tablespoons of Pace Picante Sauce instead. Will definitely make this again.
