The Best Christmas Breakfast Casserole

I'll be honest, my favorite thing about waking up on Christmas morning isn't so much the presents as it is the breakfast, especially when my wife makes her famous Christmas breakfast casserole. Out of all the Christmas breakfast casseroles I have on the blog, it's definitely my favorite.

Seriously, from the salty-sweet flavor of the breakfast sausages to the rich, creamy mixture of eggs and melty cheese, this casserole is perfect from the first bite to the last.

In addition to tasting delicious though, this breakfast casserole recipe also happens to be really easy to put together. In fact, 10 minutes of prep work is all that's required. And as far as the process goes, just 3 simple to follow steps are all you'll have to follow to make it.

Yup, it's that easy!

Oh, and did I mention this is the perfect make-ahead breakfast? Because it is!

That means you can build the casserole on Christmas Eve, and then wake up on Christmas morning, pop it in the oven, and enjoy! You'll even have time to make this gingerbread latte or peppermint mocha frappuccino while it bakes. Talk about a Christmas miracle!

By the way, if you're looking for another casserole to serve this one with, my Pioneer Woman French toast casserole is the ideal match. For something a little different, you can make this Mexican breakfast casserole.

Ingredients Needed

So, only 6 super simple ingredients are needed to make this Christmas morning breakfast recipe. In fact, they're so simple that you probably have most - if not all - of them on hand already!

Anyway, here's exactly what you'll need to make this breakfast sausage casserole:

  • Sausage- I used breakfast pork sausages to make this casserole, but any breakfast sausage works well.
  • Eggs- three large ones.
  • Half and half
  • Salt and pepper- to taste.
  • Bread- toasted and broken into pieces. Day-old bread works great, and white bread, Texas toast, or even French toast are great options.
  • Cheese- shredded cheddar cheese.

By the way, if you have these ingredients, then you have everything you need to make this overnight egg casserole. It's similar to this recipe, but you make the casserole ahead of time and chill it in the fridge overnight.

Step 1: Cook The Sausage

First, begin by greasing a 9x13-inch baking dish and preheating the oven to 350°F (180ºC).

Then, grab a large nonstick skillet and cook the sausages for a couple of minutes, breaking them up as they cook until the sausage is browned on all sides.

Step 2: Build The Casserole

Now that that sausage is good to go, it's time to bring in the rest of the ingredients. So, to do that, you'll want to take out a large bowl and add the eggs, half and half, and a little salt and pepper to it and whisk everything to combine. Then, you can add the cooked sausages, bread pieces, and half of your shredded cheddar cheese to the bowl and mix everything together with a spatula.

Once the bread is coated in the egg mixture, you can transfer all of the casserole ingredients to a prepared baking dish and top it with the rest of the shredded cheese.

How To Make This Casserole Ahead Of Time

So, as I mentioned earlier, this is the perfect make-ahead recipe for Christmas morning.

If you want to make this casserole on Christmas Eve, just cook the sausage and assemble the casserole as I described above. Then, you can cover it with tin foil, store it in the fridge, and bake it on Christmas morning.

You can also cook the sausage, assemble the casserole early in the morning, and bake the casserole whenever you're ready for breakfast or brunch!

Storage and Reheating Instructions

This Christmas breakfast casserole recipe will make 4 hearty servings, so it's perfect for a big family breakfast on Christmas morning. If you're lucky, you might even end up with some leftovers.

Speaking of leftovers, you can store the leftover casserole in an airtight container or put a lid on the casserole dish. Stored this way, it'll last in the fridge for 3-4 days. Alternatively, if you want your leftovers to last even longer, you can store them in an airtight container and keep them in the freezer for up to 2 months.

Now, even though this casserole tastes best the day you make it, it's also pretty darn delicious when reheated. That said, the best way to reheat your leftover casserole is to put it back in the casserole dish and bake at 300°F for about 10-12 minutes or until it's fully warmed through.By the way, I don't recommend microwaving the casserole to warm it up. I find that it makes the eggs rubbery.
