I always have the best intentions when it comes to meal planning for the week, but I’ll be brutally honest… I’m usually scrambling to figure out dinner!

It was on a haphazard school nights when I threw this incredible Doritos chicken casserole together. To my surprise, my family went wild for this flavorful and fun dish! They loved it so much that my kids often ask when I’ll be making the Doritos casserole next!

What can I say, casserole recipes just work for my family.

There’s just something satisfying about being able to skip the dinnertime fuss by putting all of my ingredients into one dish, baking, and enjoying.

Even though I complain a lot about not having time to cook, preparing meals for my family is actually something I enjoy. I know, big shocker, right?

With that said, I’m all about those quick and easy dinners a few nights a week.

There’s just no sense in stretching yourself too thin preparing a complicated dinner or having to resort to fast food when you have this simple Doritos chicken casserole recipe at your fingertips. You’re welcome! :)

I like to use a rotisserie chicken in this recipe to make it even easier, but, you can use any cooked chicken you prefer.

I have quite a few simple family recipes that utilize rotisserie chicken. In fact, don’t miss my cheesy chicken and broccoli casserole and my one pan chicken Alfredo rice.

This chicken spaghetti is also AMAZING!

I think using rotisserie chicken is such a great meal solution for busy families like mine, and there are so many ways you can transform the chicken into scrumptious meals like this amazing Doritos chicken casserole recipe.

My Doritos chicken casserole is soooo yummy, y’all. It’s creamy, flavorful, and packs such a delicious crunch thanks to those Doritos.

I mentioned that Doritos are one of my top five favorite foods ever, right? Pretty sure I had orange fingers most of my childhood. :)

Doritos Chicken Casserole Recipe (6)

Yield: 6-8 servings

Ingredients

  • 1 (14.5 ounce) package nacho cheese-flavored Doritos, lightly crushed
  • 2 ½ to 3 cups rotisserie chicken, shredded and cut into small pieces
  • 1 can black beans, rinsed and drained
  • 1 (15.25 ounce) can corn, drained
  • 8 oz. colby jack cheese, shredded and divided
  • 1-10 oz. mild diced tomatoes and green chiles (Ro-tel)
  • 1- 4 oz. can green chilies
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 8 ounces sour cream
  • 1 tablespoon taco seasoning
  • Cilantro for garnish, optional

Instructions

  1. Preheat oven to 350 degrees. Lightly spray a 9x13-inch baking dish with cooking spray.
  2. Spread half the crushed chips into the bottom of the prepared baking dish.
  3. In a large bowl, stir together the chicken, black beans, corn, 1 cup of the cheese, Ro-tel, green chiles, cream of chicken soup, sour cream and the taco seasoning.
  4. Spread the mixture evenly over the chips in the baking pan.
  5. Bake for 20 minutes. Spread remaining chips evenly over the top, then sprinkle with the remaining cheese. Bake another 5 to 7 minutes or until the cheese is melted. Garnish with cilantro, optional.

    one of my first recipes it requested 1 can cream of mushroom and one can cream od chicken instead of sour cream.. i havent tried it with sour cream but using the two cans, it was thick enough and creamy for anyone looking fir an alternative to sour cream.. delicious and easy recipe

    Did this take forever for anyone else to make? I’ve had it in the oven longer than 25 mins at this point and it’s still very soupy in the middle

    OMG!!!! I made this for dinner tonight, it was amazing!!!! I made mine with the Salsa Verde Doritos. Everyone in my family LOVED it, they all had seconds. I’m going to switch it up with some pulled pork and the Spicy Sweet Chili Doritos. Thank you for this great and easy dinner idea.

    Has anyone ever made this without the sour cream? Our family just does not like the taste of it. If so, what have you used to substitute? An additional can of the soup perhaps?

      I looked through several Doritos chicken casserole recipes. One of them used 4 oz. softened cream cheese rather than sour cream; another one didn’t use either one, so you could either substitute or leave it out completely.

    Mines came out super dry and bland! Not sure why I had to add more taco seasoning and thinking of pouring a jar of salsa on top. Anyone else have this experience ?

      Salsa is a good idea, even just taco sauce. I like mine more spicy so I too add more taco mix. Have added ranch dressing mix also. Lil more cream of chicken soup or even creamy cheese sauce can moisten it up a bit more tho. When I’d first Made it, yes bit dry. Just play round bit to figure out how to make this recipe more your own. Then you’ll definitely love this meal!!

    This was a big hit in our house! It rarely happens that everyone is happy with dinner, but this definitely did it! Since I have to eat gluten free, I can’t use cream of chicken soups (they have flour), so I just added a cup of sour cream in place if it (in addition to the 8 ozs your recipe called for) and it was delish! Thanks!

      My sister is also. We use gluten free chicken soup. It turns out great! Huge it in our house Noone can tell the difference.

      I also cannot eat gluten. I found a GF cream of chicken by pacific foods. If you live near a Kroger store they may have it. Also, Amazon sells it.

      Oven other then that really nothing! Make it smaller next time. Or cook everything and split it in half and then you can make some one day and then the next day you can make the other half

    I had to cook this an additional 25 minutes. I’ll bump the cook time up to 375 next time. Delicious recipe. My family loved it. We did add lettuce in addition to the Cilantro and a little hot sauce as well. Thank you

    Do the Doritos get soggy on the bottom if you make it ahead of time? Do you refrigerate until your ready to bake ? Thanks trying this tonight for a Mexican night with fahitas!

      I would just make the main mixture ahead of time and then put the chips in the pan and the mixture on top when you’re ready to cook. That way the chip won’t go soggy. This recipe is delicious!!

    Made it tonight! Super yummy and we garnished with chopped tomatoes and shredded lettuce as well! Mine took about 35 minutes total in the oven to get nice and hot in the middle though. :)

    This was soooo good!! We added cilantro to the filling and topped it w/guacamole. We had to cook it on 400 instead of 350 tho.

    Perfect for a quick meal. I added extra cheese on top. I also added lettuce and tomatoes after it was out of the oven. So delicious! I even prepared it hours before dinner. 5 stars for the quick meal.

    This is a perfect to go meal for a fast dinner. Takes only 27 min total. I added little extra Doritos on top and ectra cheese. You can even make it a few hours ahead of time.

    I made it without chiles because that is my preference. I also made the chicken I already had in my instant pot rather than spend money on rotisserie chicken. Delicious! Super easy too!
